Veggie Sandwich

Ahh the sandwich. A classic lunch food. For those of us who get bored with the day in, day out routine that lunch can so often be, here is a fast and easy twist on the classic lunch sandwich. Before I begin, keep in mind that all these portions are for just one sandwich and my personal preference. Making two or three? Double or triple what I did. You get the picture. Let's get started. 
Chives, green onions, whatever you would like to call them, chop those babies up. This is for the spread.
 Then get a bowl or small plate and mush up some cream cheese. This will make it easier to deal with later.
Add the chives, and some spices to the cream cheese. Mrs. Dash is seasoning gold. I put it on everything.
So I used some Mrs. Dash garlic and herb, along with some salt and pepper. You can do whatever though, onion powder, garlic powder, even fresh garlic.

Mash, mash, mash till it's all good and blended.
Yay here is the fun part. Picking your sandwich content! You can be as crazy or conservative as you feel that particular day. This is what was in my fridge. Sometimes I'll add cucumbers, avocado, bell peppers, spinach, whatever. I just stay away from the onions because they are already in the spread.
Spread you new spread on one piece of bread, and on the other, I put three slices of pepper jack cheese. I like to use the cream cheese as a glue for vegetables that like to make a run for it while you eat..like the sprouts. So I packed my sprouts on there and cut up a tomato on the other half.
And just in case there isn't already enough flavor here, I drizzled just a teeeeny bit of balsamic on the sprouts.

 
And that's it! Slap that lettuce on there, and put that sandwich together. Take a picture if you're proud.
Side note: If you are like my boyfriend (Alex) and can't stand cream cheese, there is an equally delicious spread which requires no dairy at all. It's basically a modified guacamole. Mash up avocados, throw in a pinch of salt here, some garlic there and a dash of cholula sauce. Easy shmeasy.

Vegetarian Breakfast Scrambler

I firmly believe that eggs are healthiest ways to start your morning. Packed full of protein that is easy to digest and will get your brain up and running. And for people who need to watch their cholesterol (my dad), there is a simple solution...egg whites! I swear by these little guys. And they are probably the easiest breakfast food after a bowl of cereal.
These are some of our farm fresh eggs. One of the perks to coming home: free rein, all organic, hand fed with a silver spoon eggs. My mom loves her little hens. 

For this scrambler I'm cooking for one so take that into consideration for portions. I used one (thicker) slice of onion and about three leafs of green kale. I. Love. Kale. Not that it tastes sooooo great, but its great for you and I love how I feel after eating it. Its just so satisfying, way more than french fries ever could be. Call me crazy. Anyway, I chopped it all up to my liking. Other vegetables I have used in the past: 
  • Bell peppers (red yellow orange or green, I don't discriminate)
  • Spinach
  • Chives
  • Mushrooms
But don't limit yourself to that list. You could even throw some ham or sausage in there if it suites your fancy.

I threw some olive oil onto a pan. No real science there, except that it is 1009284748273592357 times better than butter or vegetable oil. I could go on, but I won't.
Once the pan was hot I threw my veggies on there with some salt and pepper, some garlic powder and other miscellaneous spices. I'm an over spicer. Go tell on me. 
Just stir it all around till the kale is slightly wilted. Don't leave it too long, remember that it will still be cooking when you pour in the eggs.
So yeah, pour in some scrambled eggs. Add some milk to the mixture before hand if you like. Or don't, it really doesn't matter to me. P.s. I used three, not all of those from the counter.
 And just scramble. Scramble like you mean it.
Isn't that pretty? And so stinking easy it shouldn't be allowed. I put Cholula sauce on mine to spice it up even more. Like I said, I'm into over spicing. 
 Viola. So simple. So wonderful. Breakfast of champions.

At my brand new blog.
I'm not sure why I've decided to take this on, I've had a blog before and know how much work it is to keep it up. I'm just going into my second year of college, playing volleyball and balancing 19 units this semester. I'm gonna have sooo much free time for a blog.. right? Logically.
None-the-less I will still be having to cook myself meals, and take care of my house, so whats the big deal if I snap some pictures along the way? Seems like an alright plan to me.

I plan to post about once a week. I say "about" because it's really going to be just as my schedule allows. Lets get real..there won't be much to say about consistency.
That aside I'm super into nutrition and fitness, so I'll share some knowledge that I've aquired.
I have a passion for cooking and a boyfriend with a passion for eating. (Two plus two.. it works and I cook a lot.)
I like a clean and organized house but it doesn't come naturally so I've become pro at cheating with the house work.
And last but not least, I LOVE pintrest. I can easily spend hours on that stupid, life-sucking, wonderful, inspirational site. So when I attempt something I will share the intended result..and the actual result. That will be fun.
So if you're looking for semi-easy, semi-quick, always healthy, always (usually) great, meals, snacks, and how to's, I hope that I can give you some inspiration.
If I have accomplished that, I will have succeeded. I hope you can find something to enjoy here : )
